Responsibilities:
- Perform duties as an Executive Chinese Chef in case of his absence and assist them to disseminate the instruction to cooks, kitchen assistants and food service assistants
- Coordinate planning, budgeting, and purchasing for all the food within restaurant and food station chains
- Monitor inventory controls, ensure that adequate quantities of stocks are on hand
- Report to Executive Chinese Chef in case of any damages of facility or equipment that has to be repaired
- Design recipes and assign prices to menu items, based on food, labor, and overhead costs and develop a guideline of standard recipes
- Responsible for the operation of food preparation, cooking, kitchen cleaning and sanitation as well as to keep track on the inventory and cost reports and make necessary operational adjustments to achieve operational cost effectiveness objectives
- Monitor sanitation practices to ensure that employees follow standards and regulations
- Check the quality of raw and cooked food products to ensure that standards are met
- Perform any ad-hoc assignments as required
Requirements:
- Secondary school or equivalent with certificate in basic food hygiene
- Minimum 15 years relevant experience in hospitality industry or in 4 - 5-star hotel establishment in Asia, with at least 5 - 8 years’ experience in supervisory level or similar position and 2 years in the same position
- Strong skills and knowledge in Chinese and Asian cuisine experience in an a la carte restaurant and central kitchen operation
